The “green Chalkidiki olives” derive exclusively from the “Chondrolia Chalkidikis” olive tree variety and “Chalkidikis” of the Olea Europea variety. The olives produced by these olive tree varieties in Chalkidiki, are characterized by a big size of fruit, with a high proportion of flesh to pit, bright green – yellow color, subtle fruity scent and slightly bitter and spicy taste as well as the absence of any sensation of oiliness, due to the adaptation of the olive trees to the special soil and climate conditions of the region over the centuries, and also because of the cultivation techniques applied by the olive producers.
