The olives that are intended for stuffing are taken to work benches, where they are manually stuffed by skilled female workers. The stuffing of the olives using almonds, pieces of red pepper and garlic is a traditional practice in Chalkidiki.

Natural red peppers are a tasty, sweet and low in calories option and a rich source of vitamins C, A, K and E. Natural red peppers contain an increased number of antioxidants as well as lutein that makes for  better eye health. A special variety of Greek red pepper is the one cultivated in the region of Florina (Florina pepper).
