Pitting is carried out mechanically. A cross section is made at the one end of the olive and then a cruciform incision at the side of the stalk. With the help of water and with mechanical pressure, the pit is extracted. Light mechanical presses are used for the breaking of the olives, which do not damage the flesh or break the pit.
